Anna's Cucumber Salad & Smoothie

Cucumber Salad

  • 1 pack baby cucumber
  • 1 garlic clove
  • 2tbsp sesame seeds
  • 1/4tsp chilli flakes
  • 1tsp sweet paprika
  • 1tbsp honey
  • 1tbsp white wine vinegar
  • 2tbsp olive oil
  • Salt

  1. Spiral-cut your cucumbers by laying out two chopsticks and cutting one side at a 90-degree angle and the other side at a 45-degree angle.
  2. Coat the spiral-cut cucumbers with salt in a bowl and leave them for 30 minutes, the salt will draw moisture out of the cucumber and make them more tender.
  3. Rinse the cucumbers with leave them to soak in water for 30 minutes, wash again, squeeze and set aside.
  4. Add olive oil, minced garlic, sweet paprika, chilli flakes, sesame seeds, honey and vinegar to a bowl and mix.
  5. Add your spiral-cut cucumbers to the bowl and mix, serve with herbs.

Cucumber smoothie with an optional kick!

  • 1/2 cucumber
  • 1 apple or pear peeled
  • 1 thumb sized ginger
  • Small handful washed kale or spinach
  • 1 cup apple juice
  • Ice

  1. Scrape the skin off a thumb-sized nub of ginger using a spoon and chop roughly
  2. Peel a pear or apple, cut out the core and chop roughly
  3. Chop half a cucumber
  4. Add all to a blender with a handful of washed kale/spinach
  5. Add 1 cup of apple juice and blend
  6. Serve over ice and finish with a squeeze of lime juice, a slice of chilli or a sprinkle of cayenne pepper for an extra kick!
  7. Any leftover you could pour into an ice lolly mould for a refreshing summer treat.
