Yvonne's Batch Cook Marinara Sauce

Serves 9 portions of spaghetti
or
6-8 small pizzas (7inch)

INGREDIENTS

- 2x Onions (chopped)- 5x Garlic cloves (chopped)
- 8x Fresh vine tomatoes (chopped)
- 1 tsp Chilli Flakes
- 1 tsp Sweet Paprika
- 1 tbsp Brown Sugar
- 50ml Cold Water
- Salt and Pepper to season

METHOD

1. Fry the onions, and garlic cloves in a deep frying pan with olive oil for about 5 minutes. Add salt to caramelise the onions.
2. Sprinkle chilli flakes and sweet paprika.
3. Add fresh tomatoes and cook for about 10 minutes until the tomatoes are soft
4. Add brown sugar and cold water.
5. Blitz in a blender until pureed
6. Store in freezer zip bags and pile up flat in a freezer

TOP TIPS

- Can substitute fresh tomatoes with tin of tomatoes. One tin has about 5 large tomatoes, so makes for a cheaper substitute.
- Tip for using the zip bag: Pour the sauce inside and start to seal. Leave about a 1 inch gap and gently squeeze to let the air out and then seal completely. Do not fill up the packet full as when it freezes, it expands.
- You can use a stick blender if you don't have a food blender.

SERVING SUGGESTIONS

7inch pizza dough (1 person):
- 100g Plain Flour
- 60-80g Warm Water
- 1 tsp Olive Oil
- 1/2 tsp of Dried Yeast
- 1/2 tsp of Salt
- 1 tbsp Ground Flaxseeds

For the toppings:

- 3 tbsp Marinara Sauce
- 3x Chorizo Slices (shredded)
- 3x Black Olives (sliced)
- 1/4 Green Bell Pepper (sliced)
- A Handful of Mozzarella Cheese

METHOD

1. In a medium glass bowl, combine flour and salt.
2. In a small drinking glass, combine yeast and warm water.
3. Pour the yeast water into the flour bowl. Stir with spatula until the dough is loose.
4. Pour little olive oil on worktop and knead the dough for about 2-3 minutes.
5. Using the same bowl, add some oil at the bottom and then put the dough on top, then oil at the top. Cover with kitchen tea towel for about an hour and half.
6. Preheat the Air-Fryer to 200c.
7.Once the dough has tripled its size, dump it onto a baking parchment paper. Spread it out with your fingers until it is nice and round - no more than 7 inch round.
8. Spread with your homemade marinara sauce, sprinkle cheese and add different toppings on top.
9. Pop that into the air fryer and cook for about 5-6 minutes until your pizza is soft, but still crispy enough to eat.

TOP TIPS

- I would like to mention that pizzas are like people! No two are alike!
- For a Gluten Free options, use GF flour, egg white or flaxseed, vinegar and sugar on top of the ingredients.
- I add in flaxseeds in the pizza dough to give it more fibre. It's also high in Omega 3 - which is great for the gut digestion too!
