John's One Pot Pesto Pasta

INGREDIENTS

  • 400g pasta shells

  • 120g broccoli, roughly chopped

  • 100g frozen peas

  • 2 large handfuls of finely chopped basil

  • 50g baby spinach

  • 60g cream cheese

  • 3 tbsp green pesto

  • The zest and juice of ½ a lemon

  • Chilli flakes and Basil to serve

  • Salt

METHOD

  1. Place pasta in a large saucepan, pour over 800ml of freshly boiled water. Bring to the boil over a high heat. Cover, reduce the heat to medium-low, allowing the pasta to gently bubble away and cook for 10 minutes.

  2. Mix in broccoli and frozen peas, and cook for an additional 5-6 minutes until pasta is done and liquid is mostly absorbed.

  3. Stir in basil, spinach, cream cheese, pesto, lemon zest, juice, and salt. Then, stir until creamy.

  4. Divide into four bowls, garnish with remaining basil and optional chilli flakes. Serve immediately.
