Yvonne's vibrant seasoned chicken with tomato based sauce
Recipe- Feeds 4 people

Chicken seasoning Jar:
• 2 tbsp brown sugar
• 1 tbsp smoked paprika
• 2 tsp dried oregano
• 1/2 tsp onion powder
• 1/2 tsp salt
• 1/2 tsp pepper
• 1/4 tsp cayenne pepper
• 1 jam jar
• Desert spoon

Chicken rub:
• 1 Baking Tray
• 2 uncooked chicken breasts
• Table spoons
• Knife
• Pre-prepared chicken rub
• Clear gloves
• 2 tbsp olive oil
• Kitchen towel
• Glass bowl
• Clean film
• Shower cap

Tomato sauce:
• 1 finely chopped onion
• 3 crushed garlic cloves
• 1 chopped tomato tin
• 1tbsp tomato puree
• 3 tbsp double cream
• 1 tsp dried basil and 1tsp oregano
• Balsamic vinegar
• 2 seared chicken breasts
• 2 pans
• 1 pan lid
• Tongs

METHOD:

1. CREATE SEASONING JAR AND LEAVE OVER NIGHT
2. RUB SEASONING ON CHICKEN BREASTS. IF YOU HAVE CHICKEN WITH SKIN ON, RUB SOME SEASONING BETWEEN THE SKIN AND MEAT. LEAVE COVERED FOR ABOUT AN HOUR IN THE FRIDGE OR USE STRAIGHTAWAY IF TIME IS SHORT.
3. HEAT LARGE FRYING PAN ON MEDIUM HIGH HEAT.
4. PLACE PREPARED CHICKEN ONTO HOT PAN AND DO NOT TOUCH FOR 3-4 MINUTES OR UNTIL CHICKEN RELEASES EASILY FROM THE PAN AND FORMS A NICE CRUST. FLIP AND COOK FOR ANOTHER 3-4 MINUTES UNTIL BROWN. THE CHICKEN WILL NOT BE FULLY COOKED AT THIS POINT BUT IT WILL CONTINUE TO COOK IN THE SAUCE LATER ON.
5. REMOVE SEARED CHICKEN ONTO A PLATE AND SET ASIDE
6. REDUCE HEAT TO MEDIUM, ADD OLIVE OIL AND FRY ONION FOR 3 MINUTES AND THEN ADD GARLIC FOR ANOTHER 1 MINUTE COOKING.
7. ADD TOMATO PASTE, THEN TIN OF TOMATO. GIVE IT A LITTLE STIR FOR A COUPLE OF MINUTES. THEN ADD ITALIAN SEASONING OR DRIED BASIL AND ORGEANO SEASONING.
8. ADD LITTLE PEPPER AND SALT SEASONING.
9. THEN FINALLY ADD DOUBLE CREAM.
10. BRING TO A SIMMER, THEN ADD CHICKEN BACK TO PAN AND SIMMER FOR ANOTHER 15-25 MINUTES AT MEDIUM LOW TEMPERATURE. COVER WITH LID WHEN COOKING.
11. SERVE WITH RICE (MIXED WITH 1TSP GARLIC POWDER, 1 TSP ONION POWDER AND 1TSP OREGANO AND LITTLE OIL) AND SIDE GREEN SALAD.
