John's Fish Pie

Serves 4

INGREDIENTS

  • 1kg potatoes, peeled and halved
  • 80g butter
  • 600ml whole milk, warmed through
  • 50g plain flour
  • 1 tbsp English mustard
  • A handful of finely chopped chives
  • 350g pack fish pie mix
  • 2 boiled eggs, roughly chopped
  • 50g grated cheddar
  • Salt and pepper

METHOD

1. Boil the potatoes in a pan of boiling water until soft. Drain and add 20g of the butter, 100ml of the milk and plenty of salt and pepper. Mash together until smooth.
2. Melt the remaining butter in a saucepan over a medium heat. Add the flour and mix well. Add the milk, a splash at a time, whisking continuously until fully combined. Season well. Add mustard, chives, fish pie mix and mix together. add the eggs and stir gently.
3. Transfer the fish pie mix to an ovenproof dish and top with the mash. Scatter over the cheese and bake for 20-25 minutes until golden and bubbling. Serve immediately.
