Yvonne's poached pears

Ingredients

Pears
1 litre water
300g caster sugar
1 cinnamon stick
1 tsp vanilla extract
1 lemon juice
8 ripe pears

Caramel sauce:
50g brown sugar
a splash of water
50ml coconut milk or any milk
½ tsp vanilla extract
a pinch of sea salt flakes

Method

Place all the ingredients except the pears in a stainless steel sauce pan, do not turn on the heat. Peel the pears, add them to the pan once they are peeled, then place them onto the stove and bring to the boil, then reduce to a simmer and cook the pears carefully.

Once cooked, remove the pan from the heat and allow the pears to cool in the sugar syrup.

For the caramel sauce, mix the sugar with a splash of water in a small saucepan, then bring to a simmer. Add the coconut milk, vanilla and salt; bring to a simmer and cook for 10 minutes, stirring occasionally, until the sauce is reduced and darkened.

Serve with cooked poached pears.
