Chocolate Baklava with Chocolate Coffee Sauce

1 pack filo pastry
50g melted butter
225g chopped mixed nuts
100g honey
125g chopped dark chocolate
1 heaped teaspoon cinnamon
Zest 1 orange
½ teaspoon mixed spice

Slightly warm the honey. Mix the nuts and spices together and mix in the honey, orange zest and then the chocolate. Set aside.

Take a sheet of filo and place on a surface. Cover the remaining filo with a tea towel to stop it from drying out.

Brush the filo with butter and place another sheet on top. Brush it with butter. Cut in half. Take some of the nut mixture and place in the middle of the filo rectangle – in a line opposite the ends. Fold up one side of the filo over the filling and brush the edges with butter. Roll up tightly and place cut side down on a buttered baking tray. Brush with more butter on top. Repeat with remaining mixture. Any left over filo can be frozen.

Set oven to 200oc and bake the baklavas for about 10 minutes or until golden and crisp. Dust with icing sugar and serve warm.
