A frothy treat from the American deep south


The classic American Christmas and New Year holiday drink.ÌýSimon Parkes joined up with the food and drink writer Fiona Beckett as she whips upÌýthe frothy treat.

The classic American Christmas and New Year holiday drink

Serves 6-8

Ingredient
s
3 very large, fresh free-range eggs
75g caster sugar
100ml bourbon
100ml spiced rum
570ml creamy milk (e.g. Channel Islands or breakfast milk)
275ml whipping cream
1 nutmeg for grating

Method
Separate the egg yolks from the whites and put them in separate large bowls. Beat the yolks, gradually adding 50g of sugar until light and moussey.'

Beat in the bourbon and rum then stir in the milk and cream.

Clean and dry your whisk thoroughly then beat the egg whites until beginning to stiffen.

Add the remaining sugar to the whites and whisk until they form a soft peak. Fold the whites into the egg nog mixture.

Ladle into small glasses and grate over a little nutmeg.
