Fish Pie

Ingredients
500g mix of fish eg smoked haddock, haddock and prawns
2 hard boiled eggs
1 large handful of spinach wilted
1 onion finely diced
1 large carrot finely diced
Approx. 1 kg of boiled potatoes
200g grated cheddar cheese
1 tbsp butter
White pepper
Approx. 500ml milk
4 tbsp butter
4 tbsp of plain flour
Salt and pepper
Veg oil

Method
Preheat your oven to 180°C
Dice up an onion and large carrot
Cook them off in a pan with oil until they soften and the onions are translucent
Chop up the boiled eggs into quarters and place around a pie dish
Add your vegetables and wilted spinach into the dish
Heat the milk in a pan on the stove gently
For the white sauce, add butter into a pan and melt
Add the flour and whisk into the butter until it reaches the thickness of wallpaper paste
Add the milk slowly to the flour and butter, whisking through until smooth
Season with salt and white pepper
Chop your fish into bitesize chunks and add to the pie dish
Pour the sauce over the fish and vegetables in the pie dish
For the topping, mash down the boiled potatoes using a ricer or a masher
Add butter, grated cheddar, and season the potatoes
Dollop the mash around the edges of the pie dish, and then in the middle until it covers the top
Using a fork, create a design for the top of the pie
Place your finished pie in the oven for 20-25 minutes at 180 degrees until golden brown
Serve with green veg
