Kimchi is surprisingly easy to make and makes a great addition to rice dishes or a pork sandwich.

Please note, if mould forms on your kimchi at any point, discard the batch and start again.

For this recipe you will need a large mixing bowl, colander, disposable or new clean rubber gloves, 1-litre/1¾-pint wide-mouthed clip-top jar and a large spoon.
