Quilombo: Brazil's new chefs rescuing ancient 'slave' cuisine

The Quilombo diet is organic, gluten-free and practically lactose-free. It has its roots in African traditions and uses fresh ingredients. It’s also zero waste. No wonder new chefs love it.

Quilombo communities were formed by descendants of Africans, transported to Brazil as slaves.

Guga Rocha is a TV chef from Sao Paolo and he has been learning recipes from Elvira da Silva, a Quilombo chef.
