In this episode, Gregor takes on a classic fruit cake. Written not long after rationing, grannie’s recipe calls for powdered egg – a new experience for Gregor!
He visits his neighbour, a keen gardener, to learn about the things you can grow in a polytunnel in Lewis. Returning home with a handful of tasty ingredients, he adds them to grannie’s recipe for salmon steaks with white sauce.

Another find in the book is carageen pudding. This traditional island pudding uses seaweed, so Gregor visits the shore at Bragar to meet a local man who regularly gathers it on the rocks and has some handy tips for cooking with it.
