Deer

I love watching deer - they're really great creatures to stalk in winter especially in places like the New Forest. Don't forget to wear camouflage colours and disguise yourself by standing close to a tree. They've got a keen sense of smell so don't forget to stand down wind of them and use a telephoto lens to get close-up shots.
